Recipe Development

Garrett develops recipes for consumers, K-12 foodservice, and volume foodservice that are tested and tasted for ultimate flavor impact while meeting nutrition targets and meal pattern requirements.    His recipes maximize taste through flavor-developing cooking techniques and use of spices, herbs and other ingredients for salt-smart seasoning.  Recipes are tested and perfected to work the first time.  All recipes are tailored to meet the needs of client menus while taking into account current food trends.

Menu Consulting

As nutrition research evolves and we learn more about health, menus are expected to include stealth-healthy options that follow suit.  Menu consulting services include looking at what is currently offered to help identify opportunities to make comfortable changes to achieve targeted menu goals.  Garrett always considers labor costs, food costs, and ingredients on hand when advising on menu development or updates.

Hands-on Culinary Training

Hands-on training and culinary techniques workshops can be geared toward implementing new recipes and menu concepts.  With scratch cooking making a comeback many foodservice providers need to brush up on basic culinary skills to help them feel confident in the kitchen.  Garrett develops custom hands-on culinary trainings specific to each client’s needs with the option for continuing education credits through the Commission on Dietetic Registration or the School Nutrition Association.
